Give Me Chocolate or Die!

You know that irresistible craving for chocolate or something super sweet that you get and sometimes (ha for me it’s more like every day) can’t resist?  At times we (especially women lol) simply crave something sweet, chewy, and delicious.  But often we want something DIFFERENT, and I’m not talking Arby’s here (…dang now I’m craving curly fries!).

And so maybe I have devoted way too many blogs to chocolate (as if), but hello can you blame me?  Show me the chocolate people!!!!  And like Veruca and the golden goose, I want it NOW!

I always have the answer to any food dilemma, and today’s recipe literally it is one of the easiest recipes I have ever made, and I’m not that smart people.  It is so simple in fact that I have never ever ever written it down.

These celestial delicacies are called Scotcharoos (because of the butterscotch yo) and are a delicious and fattening twist on rice crispy treats.  It’s almost like having a rice crispy treat covered in chocolate.  Hello, how can that be bad?  It even has peanut butter in it.  Cowabunga!  Ha, I know you are laughing at me, BUT your mouth has started watering a little.  Denial is futile (I’m a poet and I know it)

But yeah, today’s recipe is a total gut-buster.  Proceed with caution.  Don’t eat it right before that special date or anything or if you are trying to get into your skinny jeans (not that I know what the flip those are).

When you look at the ingredients below, your brows may raise a little, but I promise the concoction is delicious!  Trust me, I don’t know much, but I know I love you……I mean, I know……. my sweets!

Now, some complete weirdos have told me Scotcharoos are too sweet for them (what the frak!).  To those morons, cut it into smaller pieces people (me, I could eat the whole pan lol jk don’t try it-your tummy will hate you for it).  Anywho, to a fluffy gal like me (I’m not fat, I’m fluffy), there is no such thing as too sweet.  Kind of how like broccoli doesn’t really exist.

Ok blah blah blah, onto the recipe.  Go ahead, get your chocolate on.

SCOTCHAROOS

Ingredients:

  • 1 cup Karo syrup (light)
  • 1 cup sugar
  • 1 cup peanut butter (I prefer creamy but whichever)
  • 6 cups Rice Crispy cereal
  • 1 cup (or the whole package if you want to live a little) chocolate chips, melted
  • 1 cup (or more) butterscotch chips, melted

Directions:

  1. In a small/medium saucepan, mix syrup and sugar until they come to a boil, stirring frequently.
  2. Remove from heat and add peanut butter.  Stir until well-blended.
  3. Add cereal and mix together well.
  4. Spread into large cake pan.
  5. Melt chips together in microwave and stir (microwave 30 seconds at a time and stir-repeating until melted) and spread over cereal mixture.
  6. Once topping is dry, take a bit, smile and enjoy.  J

I recommend indulging in moderation (somebody should).

Share with friends and loved ones, if you have any (especially because if you make them really fat, you will look skinnier in comparison). Or just eat the whole pan and repent on Sunday.
