To many, Hawaii is well-known for its friendly people and the rich cultural background and amazing sight-seeing opportunities.  Also worth mentioning is the food offered by the popular island.  These local and delectable foods are made using seasonal items.  The desserts are especially popular and known for their rich and fresh flavor.

If you are fortunate enough to visit Hawaii, besides the all important act of getting ‘leid’ (come on, you know I’m referring to the flowers), be sure to partake in the refreshing desserts made of fresh fruits, cream, and milk offered by the Hawaiian resorts and hotels.  For those of us without the means or vacation time, we will have to settle with trying to recreate these tasty treats.

Try this delicious and delicious Hawaiian dish:

(I have no idea what this is called-I just call it fluffy deliciousness!  Seriously its creamy and heavenly and all other yummy adjectives you can think of.)

Ingredients

  • 1 (18.25 ounce) package yellow cake mix
  • 3 (3.4 ounce) packages instant vanilla pudding mix
  • 4 cups cold milk
  • 1 1/2 teaspoons coconut extract
  • 1 (8 ounce) package cream cheese, softened
  • 1 (20 ounce) can crushed pineapple, well drained  (or fresh pineapple for the more ‘daring’)
  • 2 cups heavy cream, whipped and sweetened
  • 2 cups flaked coconut, toasted

Directions

  1. Mix cake batter per package directions.
  2. Pour the mixture into two greased 13-in. x 9-in. x 2-in. baking pans.
  3. Bake at 350 degrees for 15 minutes.
  4. After cooling, combine pudding mixes, milk and coconut extract; beat for 2 minutes.
  5. Add the cream cheese and beat well.
  6. Stir in pineapple and pour over the cooled cakes.
  7. Top with whipped cream and sprinkle with coconut.
  8. Chill for at least 2 hours.
